This is the first of three recipes that I’ll be sharing with you as a part of the week-long celebration of fall. Slightly crisp on the outside, soft on the inside, these Espresso Chocolate Chip Cookies are studded with chopped pecans and chunks of chopped bittersweet chocolate. These Espresso Chocolate Chip Cookies are a fun and less traditional way to welcome in fall – even a coffee-hating coworker enjoyed them! They are more grown-up version of your classic chocolate chip cookie. It’s probably a good thing that I didn’t have these cookies stashed in the freezer or extra chocolate in the pantry, otherwise, I might have been tempted to indulge. Needless to say, the past week has been stressful and I’ve been trying so hard to not comfort myself with wine and comfort food. My husband and I knew that with the kids back, there was a greater chance of exposure, but I don’t know that I can take the roller coaster of emotions and the kids in and out of school all year. I pray this is the only time we have to deal with exposure, testing, and the anxiety this school year. There was lots of board games, a bit of soccer and scootering, and lots of tv and Switch. It was a long week and he needed a lot of attention to keep boredom at bay, but he wasn’t sick and we didn’t expose anyone. He wasn’t allowed back at school last week, regardless of the test result, but at least he was negative. Did we end up exposing anyone? We had been so careful, even testing multiple times after some late summer travel… and now this? Exposed on Day 5 at school? It’s going to be a LONG and stressful year…. We just finished a wonderful long weekend with lots of friends. I alternated between wanting to cry or vomit. Remember how last week, I was telling you all how excited (and nervous) I was that my kids were back at school? Not long after that post went live, I got the call that I dreaded – one of the kids had been exposed to COVID and had to quarantine.
